From 2004 to 2009 he worked at Christ College, Saurashtra University, India teaching Biotechnology to undergraduate students. He joined Dr.Harold Aukema’s lab at University of Manitoba in 2010 for Masters and later transferred to the PhD program in Human Nutritional Sciences.

While doing his PhD, he actively participated in organising the ‘Functional food symposium’ at the University of Manitoba for 3 years. He is also an NSERC-FAST Trainee. His primary research interest is examining the effects of dietary fats and protein on fatty acid metabolism in health and disease. He is particularly interested in oxylipins, which are signalling mediators (e.g. prostaglandins) derived from polyunsaturated fats. Using lipidomics approach, he has done several studies investigating the effect of dietary lipids on oxylipidome of renal tissues in inherited cystic kidneys. His other research interest is in obesity management using high protein diets.

Beyond Jessay’s numerous contributions to the research community he is an active contributor to the CNS-SCN. In particular, Jessay is being recognized for his contributions to the 2015 Annual Meeting in Manitoba where he photographed all the memorable moments that can be seen here: CNS Annual 2015 Annual Conference Photo Gallery
