Manpreet S. Mundi, MD (Mayo Clinic) - "Understand the role of fibre in enteral nutrition"

Fiber in enteral nutrition encompasses a diverse group of non-digestible carbohydrates that includes soluble and insoluble fibers that have distinct physiological effects.  This presentation will review the different types of fiber used in enteral nutrition including their digestion and fermentation in the gut followed by discussion regarding how fiber modulates the gut microbiome and supports gut health and restores microbial diversity in clinical illness, as well as a discussion about the effect of fiber derived SCFA including their role in supporting colonocyte health, regulating immune responses, reducing inflammation, and influencing systemic processes. 

Kelsey Russell-Murray, RD, MSc (St. Thomas Elgin General Hospital) - "Fiber in Enteral Nutrition: Optimizing Gut Health and Tolerance from Hospital to Home"

Fiber plays a critical role in supporting gut health and tolerance in patients receiving enteral nutrition. Yet, its use is often approached with caution, particularly in critically ill populations. This presentation will review current recommendations and practical considerations for fiber use in specific patient populations, including ICU, medical, and home care settings. Participants will learn strategies for titrating fiber safely in different patient populations, including critical illness. We will explore the role and potential benefits of blenderized and whole-food commercial enteral formulas, including their fiber and polyphenol content, in clinical practice.

About the Speakers:   

Manpreet S. Mundi, MD - graduated from the University of California, San Diego with majors in Psychology and Chemistry.  He obtained his MD from the University of Southern California.  Dr. Mundi completed a residency program in Internal Medicine followed by a fellowship in Endocrinology at the Los Angeles County-University of Southern California Medical Center.  He then, joined the Mayo Clinic Division of Endocrinology as an NIH training grant fellow with a research focus in fatty acid metabolism and obesity.  Dr. Mundi subsequently joined the clinical staff at Mayo Clinic as a consultant in the Division of Endocrinology nutrition core group.  His clinical focus is obesity, bariatric surgery, malnutrition as well as nutrition support in home and inpatient settings with a special interest in support of patients on parenteral and enteral nutrition. 

Dr. Mundi is currently a Professor of Medicine and holds the leadership positions of Inpatient Nutrition Core Group Chair, Medical Director of Clinic Dietetics, member of ASPEN Board of Directors, and Medical and Science Advisor for Oley Foundation.  He is also the medical director of the Home Enteral Nutrition program and the associate program director of the Home Parenteral and Enteral Nutrition program.   Within the HPEN program, Dr. Mundi takes a very active role in research with the goal of continuing to improve the quality of nutrition support.


Kelsey Russell-Murray, RD, MSc  is a Registered Dietitian specializing in critical illness and gut health nutrition. She holds a Bachelor of Science in Human Nutrition with Honours from St. Francis Xavier University and a Master of Science in Rehabilitation from McMaster University.

Since 2014, Kelsey has worked as a clinical dietitian at St. Thomas Elgin General Hospital, where she provides nutrition care for patients in the ICU, acute medicine, and stroke units. Her hospital practice focuses primarily on the complexities of nutrition support in critical illness.

In 2020, Kelsey founded Gut Healthy Dietitian, a growing private practice dedicated to supporting digestive health. Gut Healthy Dietitian has expanded to a team of dietitians offering virtual nutrition services nation-wide, including providing dietitian services at Western University.

Kelsey is passionate about advancing the role of nutrition to support gut microbiome health and is committed to improving patient outcomes across care settings.
