Vivian Bruce

Dr. Bruce received a BSc (Home Economics) with a major in Dietetics in 1953, and an MSc (Foods and Nutrition) in 1960 from the University of Manitoba. In 1973, she received her PhD (Nutritional Sciences) from the University of Wisconsin.

Dr. Bruce was the first clinical dietician at the University of Saskatchewan Hospital in 1955, doing pioneering work on developing diets for adult celiac patients, and later became its first research dietician, investigating the effects of fatty acid saturation on biological parameters of heart disease.

After the completion of her doctoral degree, Dr. Bruce returned to the University of Manitoba and taught senior nutrition courses and developed a research program in human nutrition on the effects of canola oil on lipid metabolism in human subjects.

During her tenure at the University of Manitoba she also served as Head of the Foods and Nutrition Department for 7 years, as well as being on numerous university committees. She also served in leadership positions for the Dieticians of Canada, from whom she also received several awards. Dr. Bruce retired as Professor from the University of Manitoba in 1996.

Dr. Bruce Holub

University Professor Emeritus, Department of Human Health & Nutritional Sciences, University of Guelph


He received his B.Sc. degree from the University of Guelph (1967) and his Ph.D. (Major in Biochemistry with Minor in Nutrition) from the University of Toronto (1971). Dr. Holub received Post-doctoral training as an MRC Fellow at the University of Michigan Medical School. He has served as President, Nutrition Society of Canada and Chair, Nutrition Task Force (Heart & Stroke Foundation of Ontario). He has authored over 200 papers in scientific journals (medical, nutrition, other) in addition to various book chapters and conference proceedings. His research program is focused on dietary omega-3 fatty acids from fish/fish oils, plant oils, and resulting nutraceuticals plus functional foods for human health and the prevention/management of cardiovascular disease and other chronic disorders.

As well, he has been active in the evaluation of nutraceuticals and agri-foods for improving human health, disease prevention and management, and their potential for considerable cost-savings to the healthcare system. He has also been studying the composition and health risks associated with foods containing 'trans' fatty acids. Dr. Holub also maintains
active collaborative research with clinical groups at various Canadian medical schools, the Mayo Clinic in the United States, Japan, Greenland, and the agri-food sectors.

Dr. Holub has spoken at over 300 off-campus events (invited speaker-to universities, international conferences, food companies, medical groups, government agencies, lay groups) in over 15 countries. Dr. Holub has over 30 appearances on national TV in Canada (national news on CBC, CTV, Global, in addition to talk shows including 'Marketplace', 'Michael Coren Live', '2nd Opinion', 'Medical Hotseat', and others). Dr. Holub has given over 200 interviews for various newspapers in Canada and the U.S. (Globe and Mail, Toronto Star, National Post, Montreal Gazette, Hamilton Spectator, etc) and magazines (Men's Health, Prevention Magazine, Chatelaine, McLean 's, etc).



Dr. Khursheed Jeejeebhoy

Dr. Jeejeebhoy served as Division Director of Ggastroenterology at the University of Toronto and the Toronto General Hospital. He serves as Member of Medical Advisory Board of New York Health Care Inc. He has been Member of Colorectal Cancer Clinical Advisory Board of GeneNews Limited since November 2008. Dr. Jeejeebhoy received his medical degree from the Christian Medical College Hospital in Vellore, India and obtained his PhD from London University.

Harriet Kuhnlein is a nutritionist and Founding Director of the Centre for Indigenous Peoples' Nutrition and Environment (CINE) and Emerita Professor of Human Nutrition at McGill University. Dr. Kuhnlein received her PhD from the University of California, Berkeley, and holds an honorary doctor of laws degree from The University of Western Ontario. She was Assistant, then Associate Professor at the University of British Columbia before joining McGill University as Director of the School of Dietetics and Human Nutrition in 1985, a position she held until the founding of CINE in 1993.

Dr. Robin Moore-Orr, Retired

Until her retirement in August 1999, Dr. Moore-Orr  was an Associate Professor in the Division of Community Health, Faculty of Medicine and the Department of Biochemistry, Faculty of Science, Memorial University of Newfoundland. She has authored / co-authored approximately 50 articles in refereed journals and government and professional publications. She has served on a number of National Boards and Committees, including the Canadian Public Health Association, Breast Feeding Committee for Canada, Osteoporosis Society of Canada, Canadian Breast Cancer Research Initiative Management Committee, and the Advisory Committee to the Canadian Breast Cancer Initiative. She has also worked on numerous provincial and federal Dr,committees, including the Board of Governors of Cabot College.

Provincial Advisory Committee on Midwifery, Nutrition Advisory Committee (Atlantic Provinces), Expert Working Group on Breastfeeding (Health Canada).

Dr. Morre-Orr’s Professional memberships include The American Dietetic Association, Dietitians of Canada, Nutrition Society of Canada, Nutrition Society of Australia, Canadian Public Health Association (Chair of Family Health Division 1988-92). She was awarded an honourary Life Membership in Canadian Public Health Association in 1993.

Dr. Claude Roy

Following my residency at McGill and Harvard, I completed my training in clinical gastroenterology and GI research at the University of Colorado where I subsequently stayed for 4 years as a member of the department. Except for sabbaticals in Geneva (1975) and in Paris (1989), I have been at the University of Montreal and at the CHU Sainte-Justine since 1970. I successively occupied the position of Director of the Research Centre (1977-1982), Head of the GI Service (1982-1991) and Director of the Department of Paediatrics (1991-1995). After serving for 6 years on the Council of the MRC (CIHR), I became Director of Programs (1995-1999).

My laboratory was funded for 25 years without interruption by the CIHR, by the Canadian Cystic Fibrosis Foundation and intermittently by the industry. Research topics, which have captured my interest and monopolised my efforts in the past decade, can be listed as follows:

  • Metabolism of PUFAs
  • Peroxidation of lipids and peroxisomal function
  • Hepatobiliary disease in cystic fibrosis
  • Disorders of chylomicron formation and secretion

Dr. Scott studied Chemistry at McGill University and received a PhD in Biochemistry from Queen’s University (Kingston) followed by postdoctoral training at the MacEachern Cancer Research Unit, University of Alberta. He then joined the Nutrition Research Division of Health Canada as a Research Scientist. In 1999, he joined the Ottawa Hospital Research Institute where he is a Senior Scientist in the Chronic Disease Program. He is also a Professor in the Departments of Medicine and Biochemistry, Microbiology and Immunology at the University of Ottawa.

My long term goal is to elucidate the components of plant foods responsible for their health benefits and/or adverse effects and the molecular, cellular and physiological mechanisms of their action. Research focus is on the role of phytochemicals such as phytoestrogens (lignans and isoflavones) and alpha linolenic acid, and their interactions with drugs, on the development of breast cancer and osteoporosis as well as their metabolism and biovailability.

Studies include biochemical, in vitro (cell culture), animal, and clinical (healthy human subjects and patients) experiments and food models such as flaxseed, soy and sesame seed. Results should provide guidance in the design of functional foods and nutraceuticals and in the manipulation of diet for risk reduction and treatment of chronic diseases.
